I came up with these after my mom made a bean dip for a party.
Into 1 - 1.5 C (your choice on size) gladware, I layer the following, in order:
FF Refried Beans Tomatoes Whole Kernel Corn Salsa FF Sour Cream Sliced Black Olives Sliced Jalapenos Shredded Cheese (optional. can use FF or count points for fullfat)
A can of beans will make about 6 of these. I make up a bunch at once, and they are easy to grab for lunch on the go. And filling, too!

That sounds good. What do you dip into them? Just eat as is, or use veggies, or points for chips? Just curious how you find those most satisfying? Thanks for sharing...

If you make six up ahead, how long do they last in the fridge? Do you have to eat one every day or more than one every day?
(Sorry, I'm single and I like variety so making large recipes that don't freeze well isn't always good...but I like Mexican and salads too.)

these are so fantastic!!! I just had one for lunch... I had some left over refried beans from tacos the other night so I made three to take to work this week. YUMMY!!!!!!!!!!!!!!! just wanted to share. thanks for the idea! jeanne

conspiracygirl - As a general rule I don't eat things that have been in my fridge for more than a week. These things keep just fine for a week, but if you put cheese on them it could get soggy so I often toss the cheese on in the morning of the day I'm going to eat it.
I make up 6 at a time because that's how many a can of refried beans makes. I'd imagine that if you hold off on the sour cream and cheese they would freeze just fine. But I sometimes scoop them out and plop them on a salad, or into a low-point burrito to shake it up a bit. Or you can make only a few and use the beans for something else!

Since there is sour cream on them, I assume you eat them cold? I left off the sour cream and warmed in the microwave and I liked it that way. But if you try it, don't do it on high. The refried beans will explode!

I eat them cold if I'm eating them right out of the cup. If I put them on a salad or something though, I'll scrape off the sour cream, nuke for a few seconds to warm them up and then toss on a pile of greens - just because I like warm stuff on a cold salad.

This looks really good. You could toss in a little taco meat (or taco not quite meat) or even the turkey-barley mix from the Fiesta Cabbage Rolls in the Turn Around Cook Book.

I do this and put it on 2 small corn tortillas for 1 pt. I have it for lunch and it is filling but not stuffy ;D
