I'm Dominican though we don't eat low in fat we do have dishes that can be changed into Core. Can we have a section for different Nationalities.

Kippy, if you do this, please, please, please don't add a section for Peruvian food. I hear they have strange delicacies down there that may or may not be core, depending on whether they're deep-fried.

I love the ethnic foods idea but need to give some thought to its structure.

Wouldn't it save real estate just to post ethnic recipes in the appropriate category? You could just include information in the title that would indicate something more exotic than the usual fare.
