I already found a sweet potato Polenta recipe, posted on another catagory, then I saw this from Espie on the wpa board:
I made polenta, and right before I poured it in the pan, I mixed in a chopped up ripe & sweet banana, splenda and cinnamon, then when it was ready, i sliced and fried.
What other things go well with polenta? Not on top, but mixed in before it sets. Has anyone else experimented?

Well, I made the cream of wheat pudding recipe with corn meal instead of cream of wheat this weekend - so it was polenta-like. Basically, put an egg scrambled with some vanilla and sweetner in the polenta before you cool it. It was yummy, and I found it much more filling! The same amount of polenta lasted twice as long with the egg in it. I've also done the banana in the polenta, which is good. Also added a can of peaches (NSA of course) - diced them up and added to the polenta before it cooled. It was better in the mush (hot polenta) than the polenta that cooled, though - somehow you couldn't taste the peaches as much once it cooled.

I mix in fresh herbs and parmesan cheese ( I use points for the real stuff, but I'm sure FF would work fine) and then I top it with sauteed mushrooms.

Chop up some Canadian Bacon, and stir it in with a little shredded soy cheddar and green onions.

Oh, mexican style is good too:
Stir in some chili powder, cumin, red pepper if you like it hot, diced onion and green pepper.

Mexican Pizza
Polenta 1/2 cup refied beans chopped onions chopped green and red pepper pinch of cumin 1/2 tomato chopped
Bake the polena in pie dish, 350 for 25 minutes, then layer with rest of ingredients, sprinkle with ff cheddar cheese. bake for another 10 minutes Servith salsa and ff sour cream

Black Bean Cornmeal Cakes (Polenta)
Recipe By : Serving Size : 13 Preparation Time :0:00 Categories :
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dry black beans 3 cups water 1 small onion -- chopped 3 tablespoons water 5 cups fat-free chicken broth 1 1/2 cups cornmeal
Sort and wash beans.
In a med saucepan, cover and boil beans in 3 cups water for 2 min.
Remove from heat and soak 1 hour.
Return to boil, reduce heat and simmer till beans are tender, about 1 hour.
Cool, drain and chop, set aside.
In saucepan, saute onion in 3 T. water till onion is transparent.
Add chicken broth and bring to a boil.
Slowly add the cornmeal, stirring constantly.
Stir in the black beans and mix well.
cook over low heat till liquid is absorbed.
Pour into sprayed shallow baking pan and allow to cool before refrigerating for 3-4 hours till firm.
To serve, cut into squares or desired shapes and brown in a skillet or grill which has been lightly sprayed with nonstick spray.

Can someone please direct me to where the prepared polenta is located in the supermarket? I was there last weekend and looked like a lost puppy. I want to try it but can not find it?

I find it in the isle with the pasta--usually in a refrigerated section with fresh (not dried) pasta and pasta sauces. It is in a roll like ground sausage or cookie dough. Hope this helps you.

What exactly is polenta...a grain? how do you prepare it I'm all new to this

Polenta is basically what was called cornmeal mush if you were brought up in the south or midwest. Polenta grind cornmeal is a coarser grind than regular cornmeal (similar to grits in my opinion), but I personally prefer cornmeal. The recipe is on the container that you buy it in.
